Great in the summer...
4 medium zucchini, slice 1/4 inch thick
one large sweet onion
one garlic clove, minced
3 large tomatoes, peeled and diced
1 box Pepperidge Farm seasoned croutons
2 cups Swiss cheese, diced
1 teaspoon basil
1 teaspoon salt
1/2 teaspoon pepper
6 tablespoons butter
In large saucepan, melt butter and sauté garlic, onion and zucchini until golden. Remove from heat and add 2/3 of the croutons, 1 cup cheese, basil, salt and pepper. Mix lightly. Put into 9 x 13 butter casserole. Arrange diced tomatoes on top. Add remaining croutons and cheese. Bake at 300° for 25 minutes or until cheese is thoroughly melted.
